Soup of the late afternoon

I need to take some more photos.

The soup I'm having tonight doesn't have a name. Nemo soup. Basically rice noodles, veg, tofu.

Start by soaking your rice noodles for however long. Thinly slice some combo of onion or leek, celery, carrot, mushroom; grate some ginger. Cook them for a couple of minutes. Add broth and green vegetable (my favourite is broccoli). Cook until the vegatable is done. Add firm tofu, cut in cubes, the noodles, soy sauce, chili sauce, and sesame oil to taste. Serve topped with cilantro and chopped green onion. You can add some lime too. It might be nice to use a bit of coconut milk instead of some broth.
